I found this page from the Connecticut Council of Language Teachers to be quite useful. It lists many courses and programs for language teachers both domestically and internationally.

I came across this volunteer opportunity the other day, and thought it was worth mentioning. La Esperanza Granada, Nicaragua, has opportunities in this rural city. Volunteers work 4-5 hours per day helping children, with a committment of at least 4 weeks being asked typically.Volunteers pay only minimal administrative and uniform costs, and for transportation and housing.
